Food is one thing that tends to get spoilt really soon during the monsoons. It is quite a task to maintain the freshness of the food and one must resort to these ways in which they can retain the freshness of it. Here's how.

Do not cook in excess: Monsoons are that time of the year when food tends to get effected by fungus very easily. Besides, the climate in the city so humid that food items are bound to get spoilt. The best way is to cook only that much quantity of food which will be consumed. Make sure to distribute leftovers either to domestic helps or to the needy.

Refrigerate dry things: Dry items like semolina (rava) and all purpose flour (maida) should be kept in the fridge. Also semolina once dry roasted for a while can be stored in the fridge for days together during the monsoons and then used when required. In fact, make sure you sieve gram flour thoroughly and then store in air-tight containers in the fridge, to avoid bundling and fungus.

Using catalysts: To save lentils from insects or worms during the rainy season, smear them with mustard oil before storing it. Sprinkle some of castor oil in it in order to keep food grains fresh. Be careful to put only that much of castor oil in these grains till you see a certain amount of shine in it. If nuts get soft due to the moisture, warm them in a microwave and after a few minutes they will be crisp again.

Taking care of coked food: If kept in the open, one must stir cooked food after every two hours so that no bacteria settle on it. Also chapatis which are not consumed must be wrapped in newspapers or silver foil paper to avoid them from getting mossed. Always cover the food while storing so that it doesnot get spoiled this season. After frying papads, store them in a zip-lock packets so that they remain crisp for a longer time.
