Collage is the 24-hour coffee shop and all-day dining restaurant of Hyatt Ahmedabad.

Decor
Gushing fountains welcome you at the entrance to the Hyatt, which has two restaurants, Collage and Nonya, on the first floor. Collage is a smart all-day dining restaurant with black granite walls, dark wood paneling and wooden furniture. Though it doubles as a coffee shop, its interiors make it suitable for formal dining too.

Food
Western food is the forte of Collage. The breads here are pretty good, which also makes it a good place to drop in for sandwiches, including classics like bacon-tomato-lettuce or club. They also do good burgers — chicken and cheese, lamb, tenderloin or vegetable and cheese, which come with mustard, mayo or tomato sauces on the side to season the patty as liberally or sparsely as you like.

The highlight of the restaurant is its superb thin-crust pizzas: margarita pizza, pizza Alla Verdure (topped with vegetables), pizza Al Formaggi which is a must for cheese lovers and pizza de Pollo (chicken pizza) are excellent, and they also have pizzas with spicy Italian salami, mushrooms or ham.

Collage excels in offering European non-vegetarian main courses that are not available in most hotels or restaurants of Ahmedabad. If you like fish, their John Dory with garlic mash, vegetables, capers, olive and beurre noisette is highly recommended. The spring chicken with wilted spinach, garlic mash and aubergine is also fairly good. They do a good roasted pork tenderloin with barbecued sauce on the side: if you prefer it to be cooked in the sauce specify at the time of ordering, otherwise the pork will just come with jus or sauce brushed on its surface. The grilled tenderloin or New Zealand lamb chops are above average. For vegetarians, the potato gnocchi and mushroom risotto are good options as are the pastas. The prawns risotto however often may disappoint seafood buffs.

For those who prefer Indian food, their vegetarian or non-vegetarian kebabs are not bad though nothing exceptional. They do very good Bengali-style fish curries and are also among the few places in the city that have coastal Indian style prawn curries.
They do some good desserts. The hot chocolate pudding is a must for chocolate lovers with each bite bringing out the thick gooey melted chocolate and the mango pudding is good for the season. They also do a fairly good tiramisu but the creme caramel sometimes disappoints in its texture.

Plus and minus
Hyatt has good sandwiches, burgers, pizzas and desserts, and fairly good coffees, making this one of the better hotel coffee shops in Ahmedabad. This is also a good place for those who like western food, specially grilled fish and chicken. They have a sumptuous breakfast buffet but their lunch buffet often lacks variety.
