Flavours in Gujarat get funkier

Restaurants in Gujarat are getting more and more experimental by the day. TOI explores the wackiest fusion food available.

A fondue with a spicy Indian twist, a dosa with a western touch, or a pizza with a chocolate topping. The platter full of fusion food is here in Gujarat. With consumers willing to taste every single bite of fusion food available, restaurants and joints are leaving no stone unturned to come up with food innovations. Foodies can now get a mix of international and Indian cuisines and gorge on to wacky fusion delicacies like pav bhaji fondue, bhakri pizza, sev puri pizza, instant noodle dosas, pav bhaji dosas, instant noodle bhajiyas, chhole burgers, Indian tacos, mushroom pakora and the likes.

South Indian food, multi-cuisine garnish
Think fusion and we picture a mix of different cuisines, blended into the Indian cuisine to suit local tastes. But restaurateurs are slowly experimenting more with local consumers and are coming up with innovative dishes that a food enthusiast could never have imagined. Dosas with a Mexican/Chinese filling, pav bhaji dosa, mushroom chilli rawa dosa, corn cheese dosa, paneer bhurji dosa, palak paneer dosa, kadai paneer dosa, schezwan soya dosa, veg salsa dosa or egg dosas served with different varieties of curry ( yes, you read right, not sambar that's the usual accompaniment with dosas), are now served to those who like experimenting with their platters.

Himanshu Desai, owner of a cafe which serves varieties of egg dosas with veg/non-veg curries as side dishes, says, "Egg dosas are common in Kerala and Tamil Nadu. I think fusion is the way forward because urban India is becoming more cosmopolitan and in an era where a lot of people are globetrotting, food from different cuisines is getting fused." Other south Indian dishes fused with a cuisine from a different region include veg sandwich uttapam and a mushroom chilli idli!

Junk food wonders
Whether it is a homely vadapav (with a fusion counterpart in chhole vada pav) or its western counterparts of burgers and pizzas, junk food is also getting revamped and is being dished out in a singular avatar.

Pankaj Shah, owner of a popular pizzeria which serves pav bhaji pizza, pindi chhole pizza and paneer patiala pizza, says, "International pizza chains started serving pizzas in the country might be following the authentic taste of the Italian pizza, but all global food has to be modified according to Indian taste. We've started serving pizzas with Indian toppings to cater to popular taste. For people who belong to the older generation, these pizzas work great. Even youngsters responded positively to the fusion pizzas." Desai adds, "My wife and I had tried the kela paratha at the Parathewali gali in Chandni Chowk and we used the same concept in a sandwich. Youngsters love the spicy banana sandwich and are usually ready to experiment with fusion food."

Sweet savouries
There is something for everyone when it comes to fusion food. Even desserts are getting a fusion makeover in a big way. Foodies are guaranteed to forget counting their calories when they are offered chocolate momos, chocolate khakhras, tea-flavoured ice-cream, saunf (fennel) pastry, chocolate paan, paan and gulkand ice-cream, banana and marshmallow chocizza (pizza with chocolate sauce and toppings of bananas and marshmallows) amongst other dishes. Chocolatier Avnika Mohnot says, "Urban tastebuds are undergoing a change thanks to the awareness (about international cuisine) created by social networking sites and cookery shows aired on television channels, and consumers are open to trying innovative food. So we have chocolates with exotic flavours like basil, lemon, honey, ginger, black pepper pralines. Gujaratis are lapping them up!"

If food gives them a high, Gujaratis won't mind getting intoxicated with all kinds of flavours. With chefs pushing the culinary boundaries to cater to changing tastebuds, food lovers can truly sample some out of the box stuff.
