Being modest about it, the chef, who hails from a family of Awadh royalty khaansaamas, says, "It's my good luck that stars like Aamir Khan, Karisma Kapoor, Rishi Kapoor, Hrithik Roshan and the Bachchans like my food so much. It's an honour for me when they invite me to cook at their parties and weddings."
Talking about the stars' favourite dishes, Ishtiyaque is quick to point out, "See, being from Lucknow myself, I may sound a bit pompous, but the popularity of our cuisine can be gauged by the fact that most of these people want typically Lakhnawi food like galawat and kakori kebabs, raan mussalam, yakhni biryani, qorma, nahari etc served at their parties. They specifically ask for these dishes and people love them," says Ishtiyaque.
Hailing from Lucknow, what irks Qureshi is the fact that most people, even chefs, believe that the biryani served in Lucknow is actually a pulao. "I don't know where this belief stems from because Lucknow ki biryani is the actual biryani. People think that Hyderabad is the place where authentic biryani is served but nothing can be further from the truth. Hyderabadi biryani is actually what we Lakhnawis call tehri. We cook the yakhni separately and then layer it in a degchi with rice and put on dum. Whereas in Hyderabadi biryani, everything is cooked together like our pulao or tehri. Agar koi kehta hai ki Lucknow ki biryani pulao hai, toh woh khaane ka shaukeen nahi ho sakta," declares the chef.
